strawberry cream cake

as promised, here is the recipe for strawberry cream cake. quite simple to make, really!
you will need lots and lots of strawberries.

for the sponge cake, you will need:
250 sponge mix (from the ingredient shop)
4 eggs
50ml water
80g melted butter

pour sponge mix and eggs into mixing bowl. whip till thick
add water, whip until light and fluffy
mix butter with batter with a spatula till blended well.
pour into an 7 inch round baking tin
*its better to use a spring-foam pan that is well greased. if not line and grease a normal baking tin*
bake at 180 C for 30 minutes
let it cool before slicing horizontally into two.




glorious huge ruby red strawberries! i was lucky to get these strawberries at a super good price. RM10 for a 425g of Drisscol's USA strawberries at Isetan. must be my lucky day

to prepare the topping..
(A)
230g strawberry puree (blend strawberries in blender)
30g sugar
(B)
2 1/2 tablespoon gelatin
90ml water
(C)
300ml whipping cream

cook (A) on low heat till it boils.
mix (B) in a double boiler till gelatin dissolves
pour (B) into (A) mix evenly
let it cool over ice water until room temperature (do not overcool)
whip the whipping cream until soft peaks form
add whipped cream with strawberry mixture and mix till evenly blended. the whipping cream will have a pinkish tinge, i added a little red coloring, just a little with a toothpick








to assemble the cake...
slice the sponge cake into two (got mummy to help me do this cos its a little tricky)
first arrange the strawberries on the side of the cake tin
place the first layer of sponge cake inside and top with more strawberry slices
pour half of the topping cream
place the other sponge cake layer and top up with the rest of topping cream and smooth the top
chill it until firm/overnight. about 3 hours will do

the book actually requires you to use a 7 inch pan to bake the sponge cake and a 8 inch pan to assemble. what i did was to trim the sides off the sponge cake. so that you will be able to place the strawberries at the sides. don't actually have to use to different sizes of baking tins.

the verdict????
its a refreshing change from the usual chocolate, the cream will be quite firm cos of the gelatin. has a tangy strawberry taste, it should considering how much strawberries i used!
got good reviews from my friends and james also.

this will be a lovely cake to make for someone special. and its not too difficult also!
