carrot cake

latest baking project: carrot cake
my mum requested that my sis and i help her bake a carrot cake for her colleagues!
so here it is! from PILSBURRY THE COMPLETE BOOK OF BAKING

Ingredients:
2 1/2 cups all purpose flour
2 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
2 cups sugar ( 2 cups of sugar is wayyy too much. reduce it to 1 cup)
1 cup oil
2 teaspoon vanilla
2 eggs
2 cups shredded carrots
8 ounce crushed can pineapples, well drained
1/2 cup raisins
1/2 cup chopped nuts (optional. they didn't specify what nuts but i think walnut should be suitable)

method
1. heat oven to 170 degrees celcius
2. grease and flour baking tin. 13x9 inch pan, preferably. or you can line the tin with paper..
3. in medium bowl, combine flour baking soda salt & cinnamon
4. in a large bowl combine sugar, oil, vanilla and eggs. beat well (with a mixer)
5. stir in the flour mixture, mix well
6. stir in carrots, pineapple and raisins and nuts
7. pour batter in baking tin, bake at 170 degrees celcius for 50 to 60 minutes
8. cool the cake completely before removing it.

frosting (if desired)
light and creamy frosting
4 ounce cream cheese, softened
2 tablespoon margarine, softened
1 cup powdered sugar
1 teaspoon vanilla

combine cream cheese and margarine, beat until smooth. gradually beat in powdered sugar and vanilla, spread over cooled cake.



if you need convincing that this cake is healthy..it has pineapples (fruit), carrots( vegetable) and raisins!that's what i tell myself anyway =p

baked carrot cake, fresh from the oven. remember to let it cool before removing it.

i didn't do the frosting. too sweet for my liking. plain is nice =)
