hot chocolate souffle

my old baking project

hot chocolate souffle. soft, moist and custard like, very rich and chocolaty.
i was always fascinated by souffle, you know, how in storybooks they say that even the slightest noise can make a souffle collapse and you can't slam the oven door etc. etc.
so i decided to give it a try!


ingredients:
100g good quality dark chocolate
1 1/4 cups milk
2 tbsp butter
4 large eggs, separated
1 tbsp corn starch
4 tbsp superfine sugar
1.2 tsp vanilla extract
2/3 cups chocolate chips
icing sugar to dust

method:
1. Grease a 5-cup souffle dish and sprinkle with some superfine sugar. Break chocolate into pieces
2. Heat the milk with the butter in the pan until almost boiling. mix the egg yolk, cornstarch and superfine sugar in a bowl and on some of the hot milk, whisking.
Return it to the pan and cook gently, stirring constantly until it thickens. Add in the chocolate and stir until melted. Remove from heat and stir in the vanilla extract
3. Whisk the egg whites until standing in soft peaks. Fold in half of the egg white into the chocolate mixture. Fold in the rest with the chocolate chips. Pour into the souffle dish and bake in pre-heated oven at 180 degree Celsius for 40-45 minutes until well risen.
4. Dust with icing sugar and serve immediately

*i used two smaller dishes (not exactly souffle dishes, its an oven proof dish from IKEA, the real souffle dishes are so expensive!) and it turned out all right
*if you just want to try it out, you can half-the -portion and use a smaller dish. again, this is a very rich dessert. too much of it will make you feel "jelak"
