Ghee almond cookie

My last installation on Chinese new year cookies...


GHEE ALMOND COOKIES

Every year, my mum will order almond cookies from her colleague at school. They were so addictive, rich, fragrant and crumbly yet composed. Very hard to describe.
so. It became a mission for us to try and replicate that very same cookies cos homemade cookies are nicer, no doubt =)
After trying a few recipes...all turning out OK but not the one we wanted..My mum finally stumbled on a recipe..using ghee...and hmmm, maybe that makes all the difference, maybe that is the secret ingredient

ingredients
150g Ghee
80g icing sugar
1/2 teaspoon salt
230g plain flour
1 teaspoon baking powder
150g ground almond
egg yolk (for glazing)

method:
1. toast the ground almond over a medium/low heat, stirring continously until golden brown and fragrant. DO NOT BURN it!! (ground almond it expensive!) set aside and let it cool
2. in a bowl, combine icing sugar , salt and ghee. beat unyil light and fluffy
3. sift flour and baking powder and add in the ground almond from (1) mixx well
4. gradually fold in the dry ingredients from (3)
5.mix well (have to start using hands already)
6. take some dough and shape it into a ball.place it on a well greased/lined baking tray and slighly flatten it with a fork. glaze lightly with egg yolk
7. bake in a preheated oven at 170 celcius for 25-20 minutes

so our verdict was....it tasted 95% alike!
sinfully rich, annoyingly addictive, yummy almond taste and so so fantastic!
mission acomplished!!
