
ingredients:
6 ounce Castor sugar
5 ounce butter
8 ounce flour
4 eggs
3 tablespoon orange juice
1 cup mashed banana (preferably dali bananas, must be ripe)
3/4 teaspoon sodium bicarbonate
method:
1. sieve the flour and sodium bicarbonate
2. separate the egg white and the egg yolk
3. whisk egg white until stiff

4. in a separate bowl, beat butter and sugar until fluffy, then add in egg yolk one at a time.

5. add in the mashed bananas and continue to beat for a while then fold* in the egg white, then the flour.lastly add the orange juice.

the batter should be in "dropping" consistency.pour batter in a lined 8 inch square tin.

6. preheat oven to 180 degrees Celsius and bake for one hour.
*fold means mixing in with a spatula, and not beating with a mixer. be gentle =)

fresh from the oven, that's when it taste the BEST.
my mum says enjoying it with a cup of coffee is simply delightful, but i don't fancy coffee...unless its during the exam period..which i don't consume much also anyway. just when i am desperate...
